These Carrot Cake Pancakes have everything you love about traditional desserts, and best of all, they're healthy!
Ingredients (makes 3 servings)
- 1 cup of oats
- 2 tablespoons almond flour
- 1 teaspoon of baking powder
- 1 1/2 banana
- 1 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ginger
- 1/2 teaspoon nutmeg
- 3/4 cup almond milk
- 1 tablespoon maple syrup
- 2 eggs
- 1/2 cup grated carrot
- 1/2 teaspoon vanilla extract
To top it
- Dasavena Granola
- filleted almonds
- baked coconut
- 1/2 banana or berries
- Maple honey or bee pollen
Glazed
- 1/2 cup FAGE Greek yogurt
- 1 teaspoon maple syrup
Instructions
- Blend all the ingredients, except the grated carrot.
- Add the carrot to the blender, mix a little with a stick and then press the "Crush Ice" option about 4 times for 1 second each.
- Cook the pancakes in a skillet over medium heat, flipping to cook on both sides.
- For the glaze, just stir the ingredients.
- Plate the pancakes and enjoy!!!
