Carrot Pancakes

These Carrot Cake Pancakes have everything you love about traditional desserts, and best of all, they're healthy!

Ingredients (makes 3 servings)

  • 1 cup of oats
  • 2 tablespoons almond flour
  • 1 teaspoon of baking powder
  • 1 1/2 banana
  • 1 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 3/4 cup almond milk
  • 1 tablespoon maple syrup
  • 2 eggs
  • 1/2 cup grated carrot
  • 1/2 teaspoon vanilla extract

To top it

  • Dasavena Granola
  • filleted almonds
  • baked coconut
  • 1/2 banana or berries
  • Maple honey or bee pollen

Glazed

  • 1/2 cup FAGE Greek yogurt
  • 1 teaspoon maple syrup

Instructions

  1. Blend all the ingredients, except the grated carrot.
  2. Add the carrot to the blender, mix a little with a stick and then press the "Crush Ice" option about 4 times for 1 second each.
  3. Cook the pancakes in a skillet over medium heat, flipping to cook on both sides.
  4. For the glaze, just stir the ingredients.
  5. Plate the pancakes and enjoy!!!
